Seared Froi Gras, Apple and Almond Fluid Gel, Apple Foam, Chestnut Crisp

This is a little Froi number I thought might be nice as a appetiser

Trio of Melon, Tangerine Fluid Gel and Palma Ham Foam

I cooked the cantaloupe and honey due Melon ind spiced white wine to maximise flavour. I then poached the water melon in vodka and finished with a palma ham foam and crisp
